Preferably thaw one day in advance outside the packaging and in the refrigerator.

Heat the meat to 70°C at the core. Briefly sear the steaks on both sides in a hot pan for a total of about 6 minutes.

Ostrich steak with fried shallots and salsa picante

  • 2 Ostrich steaks
  • 50g red cherry tomatoes
  • 50g yellow cherry tomatoes
  • 2 sprigs of fresh basil
  • 1/2 chili pepper, seeded
  • 1/2 clove garlic
  • 3 tbsp of olive oil
  • grated zest and juice of 1/4 lemon
  • 25g butter
  • 2 shallots, peeled and cut into wedges
  • 1/2 tbsp brown sugar

Allow the meat to reach room temperature. Cut the tomatoes into wedges, tear the basil sprigs and chop the pepper and garlic finely. Mix with the tomatoes, half the oil and the lemon zest and juice. Season the steaks with salt and pepper. Heat the butter and the remaining oil in a frying pan and fry the steaks until cooked and browned to taste. Remove from the pan, place on a board and cover with tinfoil. Fry the shallots with the sugar in the same pan until brown and crispy. Serve the steaks with the shallots and salsa. Perfect with a slice of crispy bread and salad.
