Roast the turkey in a preheated oven at 180⁰C. Roast for approximately 35-40 minutes per kilo. Baste the turkey regularly with the baking juices. This will help it to stay moist and also helps the browning. It is important for poultry to be thoroughly cooked. Maintain a core temperature of at least 70⁰C.

  • 1 bunch rosemary
  • 1 bunch thyme
  • 50g butter
  • 100 ml apple cider
  • 150g sugar snap peas
  • 150g peas (frozen)
  • 300g spinach, coarsely chopped
  • 3 tbsp of olive oil
  • 3 tbsp of olive oil

Other requirements

Preheat the oven to 220°C. Wash the turkey and pat dry. Stuff the turkey with rosemary and thyme and rub the outside with butter and sprinkle with salt and pepper. Place in a roasting pan and pour cider over the turkey. Reduce the oven temperature to 180°C and cover with tinfoil. Roast the turkey for about 2 hours. Remove the tinfoil after 1 hour, and let the turkey bake until golden brown.
Meanwhile, bring a large pot with water and salt to a boil. Cook the sugar snap peas and peas for about 4 minutes until tender. Scoop from the pan with a skimmer and rinse with cold water. Put the spinach into the pan, remove the water and rinse with cold water. Heat the oil in a pan and stir-fry the garlic with the vegetables for 3 minutes. Serve with cooked pasta.
