Iberico Fillet is a lean piece of meat with a little layer of fat that helps to maintain the flavour. Iberico Fillet has a rich nutty flavour that results from the 6-10 kilos of acorns the Iberico pigs feed on every day during autumn.

Put  the meat in the fridge 24 hours before usage. This is a food safe method to thaw the meat.

 

Use a frying pan with fat (oil, butter or lard) until golden brown, 3 minutes on each side.  Turn on the oven and set to 80 ⁰C. Let the Iberico Fillet thread for 30 minutes in the oven at 80 ⁰C. Add salt and pepper. Next, cut in to desired proportions.

 

It is also possible too after baking gold brown to set the heat low and let the meat cook for 25 minutes, turn the meat regulary.

 

Filet Mignon can also be prepared on a grill or barbecue.

Iberico Fillet with cheese breadcrumbs

Ingredients
Preperation
  • Iberico fillet (700 gr)
  • 6 Slices of white bread
  • 100g Grated cheese (matured)
  • Bunch of fresh parsley
  • 8 Sage leaves
  • 50g Butter
  • Pepper
  • Salt

Preheat the oven to 80°C. Allow the slices of white bread to dry and mince them into fine breadcrumbs in a food processor. Chop the parsley coarsely and add the grated cheese, butter, garlic, salt and pepper to the bread crumbs. Mix well. Coat the fillets with olive oil, place on a baking sheet and cover the top of the fillet with a generous layer of cheese breadcrumbs. Put in the oven for 35 minutes.

Serve with tomatoes roasted on the same pan.
