Angus burger with roasted jalapeños, tomatoes & guacamole

2 persons

  • 2 Angus burgers
  • 3 fresh jalapeños without stem
  • 3 garlic cloves
  • 1 tbsp olive oil
  • 4 tbsp mayonnaise
  • 1 avocado
  • 1 lime
  • 1 tbsp of fresh coriander leaves
  • 60 gr of roasted pine nuts
  • 1 ripe tomato
  • 1 red onion
  • 2 tbsp white wine vinegar
  • Salt and pepper
  • 2 hamburger buns
  • Lettuce

Preheat the oven to 220C. Place the jalapeños with the garlic cloves, the olive oil and a pinch of salt in an oven dish. Mix the contents well then cover the dish with aluminium foil and put in the oven for 45 minutes.

Remove the dish from the oven and puree the ingredients. Mix 2 tbsp of the puree with the mayonnaise.

Peel the avocado and cut into cubes, mix the pine nuts, juice from the lime, the coriander and a pinch of salt and mash the ingredients using a fork.

Cut the tomato and the red onion into thin slices, sprinkle lightly with salt and mix with the vinegar.

Grill the Angus burgers 3 minutes on each side. Serve on a hamburger bun topped with avocado salad and jalapeño mayonnaise. Finish with slices of tomato, red onion, even more avocado salad, mayonnaise and lettuce.
