Duck breast brushed with honey and spices

Preparation Duck breast
  • 4 duck breast
  • 100 gr butter
  • 2 tbsp honey
  • ½ tbsp whole grained mustard
  • 1 tbsp coriander sead
  • 1 tbsp fennel sead
  • 5 twigs of thyme (only use the leaves)
  • 75 gr bacon cubes
  • 100 gr champignons (slices)
  • 100 gr onion (finely-chopped)
  • 100 ml game stock
  • 2 tbsps parsley (finly-chopped)
  • 500 gr mashed potato
  • 20 gr bread-crumbs

Start with baking the bacon cubes. Then add the sliced champignons, the onion, a dash of salt and 20 grams of butter. Bake for 5 more minutes and then add the stock with some parsley. Put the mixtures in a baking dish.

Put mashed potatoes in a piping bag. Cover the mixture in the baking dish with the mashed potatos and finish it by covering it with bread-crumbs and a few pieces of butter (30 gram). Put the entire dish in the oven for 15 minutes at 160 ˚C.

Season the duck breast with pepper and salt and bake it with 50 gram of butter until its golden-brown. Next put the duck breast in a baking dish with the gravy. Get a bowl and fill it with some honey and mustard and mix these two. Cover the duck breast with the mixed honey and mustard. Now grind the spices (you can roast the spices for 1 minute to release it flavors) in a mortar. Sprinkle the spices with the thyme on top of the Duck breast.

Put the baking dish with the duck breast in an oven of 180˚C for 10 minutes. The duck breast should be sprinkled with gravy every 3 minutes while it is in the oven.

After 10 minutes get the duck breast out of the oven and leave them to rest for 15 minutes with some aluminum on top, before serving them.
