The Flat Iron Steak is the result of splitting a steak and removing the sinew. This beautiful steak is tender, very flavourful and a good alternative.  Beef from wide, South American ranges. The cattle are grain fed for at least 120 days.

Good and simple with truffle butter and sautéed mushrooms. Or roll up and stuff with blue cheese, leek rings and pine nuts.
