Description of Veal Ossobuco

These veal shanks are ideal for stews. Ossobuco means ‘bone with a hole’ and derives its name from the bone marrow that delivers extra flavour. Dutch veal live together in large stables where they can move around freely, and natural behaviour is stimulated.

The delicious Milanese recipe calls for a stew with onions, celery and carrots. Add a tomato for taste though this is not part of the traditional Milanese dish. For a special twist use white balsamic stock with grapefruit and fennel.

Defrost preferably 1 day in advance, remove from the carton and put in the refrigerator.

Heat meat to core temperature 70 ° C. Sear meat in a hot pan, then simmer for 1.5 - 2 hours.
