Lamb Fillet in fig sauce

4 persons


  • 4 Lamb fillets
  • 12 Dried figs
  • 4 tbsp Balsamic vinegar
  • 1 tbsp Runny honey
  • 4 tbsp Madeira wine
  • Generous dash of Worcestershire sauce
  • 200 ml Poultry stock
  • Salt
  • Pepper
Chop the figs fine. Boil them in balsamic vinegar, honey, Worcestershire sauce and Madeira for about 5 minutes until it becomes a syrupy mixture.

Stir the stock in. Bring to boil and cook for a few minutes. Season with salt and pepper.

Meanwhile, bake the lamb fillets according to the instructions on the packaging and serve with fig sauce.
